Stuffed Butternut Squash
I came home and my boyfriend decided he wanted to try something new with it. He came across a recipe in one of my favourite easy cookbook, Sam Sterns Student Cookbook (I know I am not a student but it's a great book for ideas) and it turned out great!
Here is the basic recipe
1. Cut the squash in half, and drizzle with oil, lemon juice and crushed garlic. Roast for 45-60 mins
2. Scoop out the flesh into a bowl and mash with butter, mixed herbs and cheese and pop back in the over until the cheese is melted.
We served it with roasted swede and peas. It's not a fast recipe but it requires very little work with a tasty outcome.
