Lately

I thought I would share with you some of my eats recently along with some tips that I have picked up.

One of my favourite foods include nice creamy pasta, but I realise this isn't something to be eaten regularly. However, I have found a way to make it just as tasty without the cream and calories using this recipe. I used a little less cheese and included a bit of onion for flavour. At the end I saved a bit of the spaghetti water and added it to the sauce to help make it wetter and creamier (a tip from Jamie Oliver). It's really tasty and so quick as well!
Another really tasty and quick dinner was this colourful stir fry. I had loads of leftover radishes and really enjoy the crunch and colour they add to stir fry, but always forget them! I included some reduced cabbage and carrots which I fried with a bit of garlic and ginger, then added to noodles with soy sauce at the end. Yum.
My boyfriend cooked me this yummy meal, and it is definitely worth a mention. The par boiled the peppers, then stuffed them with cous cous, chicken and topped with feta before grilling. They made the perfect meal on a warm day.

Chicken Pie. Yum. A special treat with buttery pre made puff pastry. For the filling, I fried onions, chicken, carrot, and leeks, then made a sauce with flour and chicken stock with a bit of mustard before topping with the pastry and popping in the oven.

Salads. I have really been loving salad recently. Spinach, carrot, radish, tomato, cucumber, tuna and sweetcorn. If you are looking for a cheaper alternative to great sweetcorn, I recommend the Sainsbury basics as it is sweet and just as good as green giant.
