Recipe 07 Spanish Style Chicken (M&S)
I am lucky enough to work within reach of an M&S and a Waitrose. Although I can't always afford to shop there, they give me some really nice ideas for meals (and are always great if they reduce food). I recently popped into M&S and found a recipe card which I hadn't noticed before. I picked one up and although a few of them use jarred sauces, there was a spanish style chicken which took my fancy. I hadn't really used smoked paprika before and had lots of veg which was needed for the recipe which was perfect. The recipe serves four, and claims 385kcal, 9,7g fat, 2.1g sat, 13.1g sugar, 0.14g salt per portion which means that as well as being healthy, it was delicious. Here is the recipe...
2 tbsp Olive oil
1 Pepper finely sliced
1 Onion largely diced
2 Garlic - Crushed
4 Chicken breasts
1tbsp Smoked paprika
2 tbsp Fresh rosemary (I used dried and it was fine!)
690g Tomato Passata
400g Cannellini beans
Heat the oil in a large non-stick frying pan or wok. Add the onion, pepper and chicken and stir-fry for 3-4 minutes until chicken is lightly coloured.
Add the courgettes, paprika, garlic and rosemary then stir fry for 1-2 minutes.
Tip in the tomato passata and cannellini beans. Simmer gently, stirring occasionally, for 5-8 minutes or until the chicken is tender and the sauce has thickened slightly. Season to taste.
Serve with rice or pasta, with a crisp green salad on the side.
I served it with wild rice as I had a craving for it and it was delicious. It is something I might also try making in the slow cooker as it might intensify the smokey flavour even more. I think a nice twist to the recipe would also be to add a bit of Chorizo.
