Recipe Wk 06 Spiced parsnip & Carrot soup

I had recently visited Asda and picked up a pack of parsnips for 10p and wanted to find something new to make with it. In my little book of recipes, I found a Waitrose leaflet recipe for spiced parnsip and carrot soup and thought it was perfect for this cold wet weather.
Here is the recipe

Ingredients (for 4 servings...I made 2)

Vegetable Oil
1 Onion, chopped
1-2 red chillies, deseeded and chopped
1 tbsp Garam Masala
500g parsnips chopped
500g carrots chopped
1l of Vegetable stock
juice and zest of 1 orange (I omitted this as I forgot to buy one)
1 tsp cumin seeds
1. Heat the oil in a large pan and cook the onion and chillies for 5 mins until softened. Add the garam masala and cook for 1 minute more.

2. Add the parsnips, carrot, stock and 200ml water. Bring to the boil, cover and simmer gently for 20-25 mins until the vegetables are tender.

3. Using a blender, whizz the soup until smooth. Stir in the zest and juice of orange then heat gently. Serve in bowls and scatter over the cumin seeds.


I thought this was a really tasty soup, though for my tastebuds it was a little too spicy. The recipe doesn't suggest yogurt, but I had to add a little natural yogurt to my soup to make it tastier for me. This doens't mean I wouldn't make it again, I just might hold back of some of the spice. If you want a perfect soup for the cold wet weather, then this is perfect and really simple to do.
