This weekend was an amazing foodie couple of days. Starting with a delicious three course meal at home for Valentines day with thanks to M&S (including cheese souffle, paella and cheesecake with irresistible chocolate) to a tea party with plentiful cake. This means that the week following, I will be eating a lot of leftovers. Here is what I ate on Monday.
My breakfast is slightly different, with my banana and peanut butter on a muffin!
Part of my lunch were leftovers from Mondays recipe review (Jamie Oliver's Smoked Haddock and corn chowder). I just added some cucumber and cheese to make it a little more filling.

For one of my snacks, I got a pick of cakes from the goodie bag we were given after our tea and cake party. I chose a small chocolate brownie and the almond apple cake.  

For dinner, I needed to use up some asparagus (leftover from the M&S meal deal) so I made a creamy asparagus pasta. I made the sauce using onions, garlic, a little stock, a spoon of light philidelpia and a splash of cream (also left over from the chowder). It was easy and quick and I served with spinach, broccoli and peas.

I seem to get peckish after eating pasta so snacked on a small orange.

It feels like a random mix of food today as I was eating what needed using up rather than what I wanted, but it was all tasty so can't really complain!

  1. I just had an English muffin with nut butter and banana for breakfast— one of the best things ever!! :)

    1. Tasty! It seems to be the only thing that keeps me full until lunch time!
