Recipe 15 Banana Spinach Pancakes
I am starting to enjoy sneaking some more veggies in my breakfast and I have found the easiest way to do this is using spinach. I found a recipe for banana spinach pancakes and wanted to try for a 'treat' breakfast that was actually healthy and nutritious.
Ingredients:
½ cup gluten-free rolled oats
2 Tbsp. ground flaxseed
¼ tsp. cinnamon
¼ tsp. vanilla
3 eggs
1 cup raw spinach leaves
1 medium ripe banana, cut into pieces
1 Tbsp. water
1. In a blender, combine spinach, banana and water; blend until liquid.
2. In a small bowl, beat eggs.
3. In a medium bowl, combine oats, flaxseed and cinnamon. Add in liquid contents of blender, beaten eggs and vanilla extract. Combine completely.
4. On a greased hot griddle or frying pan, place 1/4 cups full of pancake mixture. Cook until browned on each side. Top with real maple syrup or fresh strawberry syrup.

For my pancakes, I used my pancake hot plate as I don't actually have a large frying pan and was easier to do more thicker ones at the same time.
The addition of vanilla and cinnamon to these made them sweet so I didn't need any honey or sugar with them which makes them even healthier. I loved the texture which made them feel naughtier than they were and it is always an added bonus when you can cram some more fruit and veg into your diet.
