Recipe 24 Chicken, Goat's Cheese & Tomato bake

I found some reduced goat's cheese at Morrisons so wanted to try something new with it. I found a great looking recipe that only required putting all the ingredients in a pan and letting it do the hard work. It was the Chicken, goat's cheese and cherry tomato bake from BBC Good Food website. The chicken came out really moist, the tomatoes deliciously sweet all with a great sauce created from the wine and tomato juices. I didn't use chicken with skin, but just cut a small pocket to pop the goat's cheese in which seemed to work perfectly still. It suggests serving it with rice, but I did mine with potato and vegetables.


  • 4 part-boned chicken breasts
  • 150g firm goat's cheese
  • bunch thyme
  • 500g cherry tomatoes
  • olive oil
  • splash white wine


  1. Heat oven to 190C/fan 170C/gas 5. Loosen the skin from the chicken breasts and stuff each with a slice of the goat’s cheese and a sprig of thyme. Put in a shallow ovenproof dish.
  2. Halve the cherry tomatoes and scatter around the chicken with a few more sprigs of thyme, a drizzle of olive oil and splash of white wine. Season with pepper, and salt if you wish.
  3. Bake for 25-30 mins until the chicken is tender and golden.
