Recipe 26 Mary Berry Blueberry and Vanilla Muffins

With a fresh punnet of blueberries in the fridge and a love for muffins, it was time to try a delicious baking recipe. Previous attempts at muffins have never really worked that well, turning out a bit too wet but nicely browned on top. So I tried a Mary Berry Blueberry and Vanilla muffin recipe from her Complete Cookbook. I was impressed how they came out, being light and fluffy on the inside. 

There is a note on the recipe explaining how these are traditional American muffins, which are not too sweet and I would agree. Don't get me wrong, I love the muffins you can purchase at coffee or cake shops, but they are super sweet. This is definitely a nice alternative.

Ingredients
250g Plain Flour
2 tsp Baking Powder,
150g Caster Sugar
175ml Milk
1 tsp Vanilla Extract
2 Eggs
150ml Vegetable oil
90g Blueberries


1. Line the muffin tin with the paper cases.
2. Put all the ingredients expect the blueberries into a bowl and mix until evenly combined. Stir in the blueberries.
3. Divide mixture into cases and bake at 180 c for 25-30 minutes until risen and lightly golden.


I have quite large muffin cases, so look a little small, but they were great. The top was nice and crunchy while the middle was nice a soft, but the occasional burst of sweet berry. An easy recipe that I would make again!
