Recipe 31 Quick Salsa Chicken Recipe

For this weeks recipe, I used a combination of two websites to create a quick salsa baked chicken. I had some leftover salsa in the fridge that needed using up and this recipe looked tasty, but I was unable to find any Taco seasoning (is this an American thing?). So I combined the fresh ingredients for the taco seasoning from here and hoped for the best.

I was really pleased how it came out. Packed with flavour it is a simple and easy recipe that I would definitely do again. Even without the correct taco seasoning, it was tasty and I would imagine it would be easy to change the cheese or even use your own home-made salsa.

Ingredients for two
2 large boneless skinless chicken breasts (about 1/2 lb)
2 teaspoons Old El Paso™ taco seasoning mix (from 1-oz package)
1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/2 cup shredded Cheddar cheese (2 oz)
1 tablespoon sour cream, if desired
Taco Recipe
4 garlic cloves, crushed
1½ tbsp dried oregano
2 tsp ground cumin
2 tsp paprika
pinch chilli flakes

Method

Heat oven to 375°F (190C). Sprinkle both sides of chicken breasts with taco seasoning mix; place in ungreased 8-inch square (2-quart) glass baking dish. Pour salsa over chicken.  

Bake 25 to 35 minutes or until chicken is fork-tender and juices run clear. Sprinkle cheese evenly over chicken; bake 3 to 5 minutes longer or until cheese is melted. Serve with sour cream.


I served it with wild rice, beans, peas and broccoli which was a great combination.
