Recipe 44 Jumble Cookie Recipe

With the Great British Bake Off long in the distance, I turned to 'The Great British Book of Baking' recipe book for some tasty treats. I chose the Jumbles, or what I would just call a cookie.
Makes 16
125g Unsalted Butter
100g Caster Sugar
50g Light Muscovado Sugar
1 medium egg
1/2 teaspoon vanilla extract
175g Plain flour
1/2 teaspoon baking powder
your mix of flavourings up to 100g

1. Preheat the oven to 190C/375F/gas 5
2. Gently melt the butter in a saucepan. Remove from the heat and stir in the sugars. Using a fork, beat the egg with the vanilla in a small bowl then stir into the butter and sugar. Sift the flour and baking powder into the pan and stir through. Add your chosen toppings.
Using a tablespoom, scoop the mixture onto some greased baking trays allowing room to spread.
Bake for 10-12 minutes or until lightly brown and firm to touch.
Cool for 3 minutes before transferring to a wire rack.

I loved how easy this recipe was and how little washing up was required. I enjoyed creating two different flavours from the mixtures, chocolate and raisin but you could also add some nuts or other dried fruit.
A great easy recipe that I am going to keep up my sleeve for those times when you just need an easy quick cookie!
