Giovanni Rana Sun Ripened Tomato & Mascarpone Sauce Recipes

As part of the launch of new authentic flavours of Italy from Giovanni Rana, I was given some sauces to try, but in a new and exciting way. The sauce is described as 'bursting with the taste of Italian sunshine, tomatoes left to savour the sunshine combined with the underlying flavours of creamy mascarpone and a drizzle of extra virgin olive oil'.
When I saw a tomato and mascarpone flavoured sauce, I immediately thought of baked chicken and came up with this super simple recipe.

Tomato & Mascarpone Baked Chicken
1. Place chicken, chopped peppers (optional) and sauce in an oven proof dish and cover with sauce.
2. Place in a pre-heated oven for 40 minutes or until chicken is done.
I served mine with rice and vegetables but would also go nicely with mashed potato, or the place on top of some pasta.
The sauce was really rich and creamy which strong tomatoey flavours which I loved and worked well baked. I think it would work quite well with baked meatballs, and topped with some cheese as well!

I had a little leftover, and in true Lisa Loves Leftovers style, I made them into another dish using store-cupboard ingredients.
Baked tomato and ham omelet Recipe
1. Mix together two eggs, a splash of milk, salt and pepper.
2. Add in some chopped ham, and peas
3. Pour mixture into a muffin tray
4. Add a dollop of the Tomato and Mascarpone sauce into the centre of each muffin and top with some herbs.
5. Bake in a preheated oven until firm and cooked through
These are a great little idea as they are quick to make, can use up anything you have leftover in the cupboard, and the hit of flavour from the sauce in the middle is a great surprise. You could also make these adding some cheese, spring onions and any other cooked meat or vegetables and can be eaten for breakfast, lunch or as a snack!
The Tomato and Mascarpone sauce is another great recipe from Giovanni Rana and can be made into a number of different dished with a bit of imagination. It is full of flavour and is rich and creamy making it the perfect base for different creations.
