WIAW No Post Bank Holiday Blues
Having been treated with a three day weekend, my normal What I Ate Wednesday is showing what I ate Tuesday. In the three days off work, my tummy was spoilt with baba ganoush (recipe coming soon), peanut butter lava cakes, and homemade veggie sausages. So I was thinking my first day at work would be a little uninteresting, but I came up with some great meals.
I started with banana porridge with blueberries and strawberries, topped with peanut butter and seeds for crunch.
A colleague came back from a trip to Canada, and rather than bringing home some treats, she treated us to some tasty cookies. An M&S triple chocolate variety warmed in the microwave for 10 seconds really hit the spot.
On the bank holiday, I found some great reduced edamame and butter bean salad with a chilli dressing. It was 29p so I didn't really look at what was in it properly but was pleasantly surprised when it had peas, sugarsnap peas, butter beans, edamame, broad beans and spinach in.
I had a late afternoon snack of an apple.
And for dinner I really fancied something with mince and tomato. I made a huge batch of bolognese and divided up in pots ready for other lunches and dinners. What was left, I made into a chilli by adding a bit of chipotle paste, cumin and smoked paprika, and served with some fried peppers and a leftover tortilla.
My dessert was a cheeky lindt bunny...the small one of course!
