WIAW Comfort food and weekend leftovers
I am currently writing this in bed at 8pm whilst trying to recover from a horrid cold with a busy week ahead. When I have a cold, I often find I'm not hungry, whilst still craving comforting warming food.
So it would come as no surprise that I ate peanut butter and banana on a bagel for breakfast. As this is boring, I thought I would show you one of my different breakfasts that I tucked into at the weekend. I baked some figs with honey and served it with greek yogurt, homemade granola and pomegranate. It was delicious.
Lunch was leftovers from the weekend, with a couple of homemade Mediterranean sausage rolls, roasted peppers, broccoli and tomatoes. I had also made a mustard variety and one with homemade onion chutney as well, but these were my favourite.
One of my afternoon snacks was a homemade pistachio and chocolate biscotti with a cup of tea. These were homemade at the weekend as well from a recipe given to me from those at Bake with Maria which you can find here
My second afternoon snack was a sweet apple with a thick liberte blueberry yogurt.
My dinner was a much needed comfort food of baked beans on toast. But as I don't like just plopping a can of beans on bread, I added some extra veggies but cooking some sweet, onion and grating some carrot into the beans. It was so tasty and just what I needed.
