WIAW Let's skip to Winter
I met up with a friend tonight and after huddling under an umbrella out of the rain, we both noted how it felt like skipped Autumn and went straight from summer to winter. So after struggling to get out of a warm snuggly bed in the ever darkening morning, I made a bowl of porridge with banana and peanut butter.
Lunch was a lighter ensemble of leftovers including some cooked home-grown beetroot from my parents, some grated cheese tomato and reduced ham to pop on top of some rice cakes.
I had an afternoon snack of a sweet apple found in Aldi in their super six deal with some mango yogurt.
Dinner needed to be something quick and easy as I was late home after a catch up. Rummaging through the fridge, I cooked together some onion, broccoli, baby sweetcorn and ham in an egg mixture and topped with leftover cheese and home-dried basil.
I think it will soon be time to start making more soups and enjoying a warm meal at lunch. Any recipe recommendations?
