Tilda Quinoa and Basmati rice recipe ideas

Tilda sent me some of their healthy easy rice packets, including the Brown Basmati and Quinoa mix. It can be made in just two minutes in the microwave or fried quicky on the hob. It has a delicious nutty flavour and has known health benefits such as being a good source of calcium, magnesium and manganese.
I wanted to include in some recipes which were healthy and full of fresh vegetables as well. I roasted some salmon with lemon and fennel, and ate it with a selection of other roasted vegetables.
The rice lasts for 2 days in the fridge so is perfect for the next day leftovers as well. I made a lunch up with some halloumi, and vegetables for a nutritious and tasty lunch.
