WIAW Hot Cross Buns

I started my Monday very much as usual after a lovely weekend away at the new forest. A weekend of walking, cooking and relaxing meant it was hard to start the week eager for work but the banana and peanut butter on toast helped get me back into the routine.
For lunch I had a wrap with ham, cheese spinach and pesto. These were all leftovers from the weekend which needed using up.
I had an afternoon snack of some fruit
For dinner I had a meal made with this Tilda garden vegetable and quinoa rice using a pack that was sent to me to sample. It was sweet potato and coconut and spinach mixed with the precook we rice and was delicious and simple. Keep your eye out for the recipe.
My evening snack was a hot cross bun and butter which we made from scratch at the weekend. You can find the recipe here. They were a Paul Hollywood recipe and included apple as well as mixed fruit and peel. Even if you don't like hot cross buns normally, they are worth making for the smell when they are baking!
