Mackerel Pate Recipe

I love any kind of smoked fish and mackerel is normally one of the cheapest to find. Already precooked and ready to eat it makes for an easy dinner, lunch or breakfast. I tried it as something to have for lunch in the form of a pate...something I have only ever bought. Mixed with a few simple ingredients and popped into a blender, it's an easy and quick lunchtime dip. This recipe makes quite  large batch, but section it off into portion sizes and it freezes really well.

2 x 180g Smoked mackerel 
Juice if half Lemon juice
Spring onions
200g Cream cheese
Few drops Tabasco
1. Flake the fish into a food processor. Add the rest of the ingredients and blitz until well mixed.
2. Chill in the fridge until required
Enjoy this smokey creamy pate served with pitta, toast or crackers.
